Ingredients

  • 16oz bow shaped  Pasta
  • 2 cloves Garlic
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 chicken breasts
  • 1/3 cup sun-dried tomatoes in oil
  • 1/2 cup basil pesto
  • pinch of pepper

Preparation

  1. Bring slightly salted water to the boil in a saucepan. Add the pasta. Add a few drops of olive oil to the boiling water to prevent the pasta from sticking together.
  2. In a large saucepan, heat the olive oil then sautee chopped onion and garlic until soft.
  3. Add sun-dried tomatoes, chicken and a dash of  pepper. Cook until the meat is thoroughly cooked.
  4. Combine chicken mixture with pasta and pesto in a large bowl. Mix toegther lightly and serve.
  5. This dish is tasty both warm and cold as a salad.
