Vegetarian tzimmes recipe
This vegetarian tzimmes recipe, also known as vegetarian tsimmes uses vegetarian style “chicken” plus sweet potatoes for a vegetarian main or side dish accompniment. Tzimmes is part of a traditional Jewish meal and is a healthy vegetarian dish that can be eaten at any time of the year.It is a traditional Jewish sweet stew usually comprised of carrots and dried fruit. Prunes or raisins are often used as a re dried apricots. Some add chunks of meat usually beef brisket but the dish can be made without any meat for a vegetarian version whcih can be vegetables and fruit only or include a meat alternative. Also chickpeas or beans could be added for extra protein. The dish can be flavoured with honey and sugar and other sweet spices like cinnamon. Traditionally sliced as rounded pieces, carrots are used to symbolise the hope of prosperity in coming year as they are thought to look like gold coins.

Serves: 4
Ingredients:
- 1 pack 350g Quorn “chicken” pieces
- 2 diced cooked sweet potatoes or 2 cups canned sweet potatoes
- 1 small sliced red or green bell pepper
- 1 red cubed onion
- 1 sliced carrot
- 1 stalk sliced celery
- 1 sliced orange
- 1 sliced lemon
- 1 cup chopped dried fruit
- 1 minced clove garlic
- 2 tbsp olive
- 1 tbsp soy sauce
- 1 tbsp lemon juice
- 1 tbsp basil
- 1 small glass wine or apple juice
Preparation:
- Place all the ingredients into a large casserole dish on the hob.
- Bring to a boil then reduce to simmer, cover and cook for 40 minutes.
