Ingredients
- 2 (6-oz) boneless skinless chicken breasts
- 1 onion, chopped
- 1 green bell pepper, thinly sliced
- 1 cup sweetcorn, tinned drained
- 4 ounces Monterrey Jack cheese, grated
- 1/4 cup low fat sour cream
- 1 cup mild salsa
- 8 six inch corn tortillas, microwaved
- 1 tbsp olive oil
- 1/2 cup fresh coriander, chopped
- salt and pepper to taste
Preparation
- Heat oven to 450°F.
- In the meantime half fill a medium saucepan with water with a pinch of salt and bring to the boil. Add the chicken, reduce heat then simmer for about 10 minutes or until cooked through. Transfer to a plate to cool.
- Heat the oil in a large frying pan over a medium heat and add the onion, pepper and pinch of salt and pepper. Fry for about 5 minutes till tender. Add the corn and sour cream and heat for about a minute.
- Fold in the chicken, coriander and 1/2 cup of the cheese.
- Spread 1/2 cup of salsa in a baking tray. Roll the chicken mixture in the tortillas and place seam side down in the baking tray.
- Top with the remaining salsa and cheese. Bake for about 10 minutes until golden brown.
