Smoked salmon and pea frittata

Ingredients

  • 200g pack smoked salmon
  • 500g new potatoes
  • 8 large eggs
  • 100g frozen petits pois
  • 2 tbsp chopped dill
  • pinch salt and pepper

Preparation

  1. Slice the potatoes into thick slices and cook in a pan of boiling salted water until tender for about 10 minutes. Drain and leave to cool.
  2. Slice the salmon into wide strips. Crack eggs into a bowl and beat with a fork until light and foamy. Mix in the smoked salmon, dill, peas and sprinkle with salt and pepper. Finally, stir in the potatoes.
  3. Heat 3 tablespoons of  oil in a large frying pan. Add egg mixture and cook over a low heat for about 10 minutes or until the egg starts to set.
  4. Place a plate over the pan, top of the pate face down, then invert the frittata onto it. Slide back into the pan and cook for a further 5 minutes to brown underside then set on a plate and leave to cool for 5 minutes
  5. Cut into wedges and serve.
