Ingredients
- 1 large eggplant / aubergine, cut into 1/2-inch pieces
- 1 1/2 teaspoons curry powder
- 1 can chickpeas, rinsed
- 1 cup, basmati rice, white or brown
- salt and black pepper to taste
- 1 tbsp olive oil
- 1 onion, chopped
- 2 pints cherry tomatoes, halved
- 1/4 cup plain low-fat yoghurt, optional
- Coriander, fresh, chopped, optional
Preparation
- Place the rice, 1 ½ cups water and a little salt in a saucepan and bring to a boil. Stir the once, cover and reduce heat to simmer for about 20 minutes. Remove from heat and stand, covered.
- Heat the oil in a saucepan over a medium heat. Add onion and cook for about 5 minutes, stirring occasionally, until soft.
- Stir in the tomatoes, eggplant, curry powder, 1 teaspoon of salt and ¼ teaspoon of black pepper. Cook, stirring, for about 2 minutes.
- Add 2 cups of water and bring to the boil. Reduce heat and simmer, partially covered for about 15 minutes, until the eggplant is tender.
- Add chickpeas and cook for about 5 minutes.
- Remove from heat and stir in the coriander. Rake through the rice with a fork.
- Serve the vegetables over the rice with optional yogurt.
