Ingredients
- 8 shallots or small onions
- 1 courgette, sliced
- 1 red pepper, diced
- 8 small new potatoes
- 300g firm smoked tofu, cubed
- 2 tbsp tomato purée
- 2 tbsp soy sauce
- 1 tbsp sunflower oil
- 1 tbsp clear honey
- 1 tbsp wholegrain mustard
Preparation
- Place the shallots or onions in a bowl, pour over boiling water until fully covered and set aside for 5 minutes.
- Cook the potatoes in a pan of boiling water for about 5 mins or until tender. Drain and set aside.
- Mix the tomato purée, soy sauce, oil, honey, mustard and seasoning in a bowl to make a marinade.
- Toss the cubed tofu in the marinade and set aside for at least 15 minutes.
- Heat the grill to medium heat. Drain the shallots or onions then cook in boiling water about 5 minutes. Drain well.
- Thread the tofu, potatoes, shallots, courgette and pepper on to skewers.
- Place under the grill for about 10 minutes, frequently turning.
- Before serving brush with the remainder of the marinade.
