Ingredients
- 1 litre hot chicken stock
- 200g chicken leftovers, shredded
- 100g portobello mushrooms, sliced
- bunch spring onions, sliced, whites and greens separated
- 1 tbsp Thai red curry paste
- 1 tbsp Thai fish sauce
- 2 limes, zest and juice
- 2 tsps sugar
Preparation
- Pour the stock into a saucepan and stir in the curry paste, fish sauce, sugar, lime juice and most of the lime zest.
- Bring to the boil and add the mushrooms and spring onion. Cover and simmer for a few minutes.
- Add the chicken and heat through.
- Serve into bowls and top with the remaining lime zest.
