Ingredients

  • 4 skinless chicken breasts
  • 3 tbsp curry paste
  • 3 tsp chilli powder
  • small root ginger, peeled and grated
  • pinch caster sugar
  • 250g cherry tomatoes, halved
  • ½ small red onion, chopped
  • handful coriander, chopped
  • 1 chilli, seeded and sliced
  • 1 lemon,½ juiced and ½ cut into wedges to serve

Preparation

  1. If using wooden skewers, soak for 10 minutes in cold water or use metal ones.
  2. Cut the chicken into bit sized chunks and place in a bowl with the curry, ginger and 2 tsp of the chilli powder. Add a pinch of sugar, salt and pepper, then mix well and set aside to marinate for 10 minutes.
  3. Mix the tomatoes, onion, mint, chilli, remaining chilli powder and lemon juice. Season and mix well.
  4. Thread the chicken onto the skewers and grill on a high heat for about 10 minutes, turning, until golden or until cooked through.
  5. Serve with the tomato salad and wedge of lemon.
