Ingredients

  • 250g chestnut mushrooms, sliced
  • 400g tin chopped tomatoes
  • 400g tin kidney beans
  • 2 garlic cloves, crushed
  • 2 chillies, chopped
  • low fat spray oil
  • 2 tsp ground cumin
  • 150g green beans, sliced
  • half-fat crème fraîche , to serve

Preparation

  1. Fry the garlic and chilli in the spray oil for a few minutes.
  2. Add the mushrooms and cumin and cook for a further few minutes.
  3. Add kidney beans, tinned tomatoes and 200ml water, mix and simmer for 10 minutes.
  4. Add green beans and cook for further 5 minutes or until the sauce is thickened. The vegetables should be tender.
  5. Serve with a spoon of crème fraîche.
