Spiced falafel under 100 calories

Ingredients

  • 400g tin chickpeas, drained
  • 1 small onion, chopped
  • 1 garlic clove, crushed
  • 1 tbsp oil
  • Low fat spray oil
  • 1 egg , beaten
  • 2 tsp ground cumin
  • 1 tsp dried mixed herbs

Preparation

  1. Heat 1 tbsp oil in a pan and fry onion and garlic over a low heat until softened.
  2. Tip into a large bowl with chickpeas and spices. Mash up together with a fork. Add dried herbs and egg.
  3. Mould the mix into 4 balls with your hands. Heat spray oil in the pan and fry the falafels on a medium heat for about 5 minutes, turning occasionally until golden brown and firm on all sides.
  4. Serve hot or cold.
