Ingredients
- 700g carrots, peeled, thinly sliced
- 1 large onion, thinly sliced
- 1 garlic clove, crushed
- 1 litre vegetable stock
- Few sprays low fat spray oil
- 125ml freshly squeezed orange juice
- 2 tbsp finely chopped fresh mint
- Single cream, optional
Preparation
- Warm some spray oil over a low heat in a saucepan and add the carrots, onion and garlic. Cover and leave until the vegetables soften for about 12 minutes.
- Add stock and bring to the boil then lower heat and simmer, covered, for 20 minutes or until the vegetables are very soft. Turn off the heat and set aside to cool.
- Strain the vegetables through a sieve retaining the liquid.
- Place the vegetables in a blender and blend till smooth then return to saucepan and add the liquid. Stir well and reheat.
- Add orange juice and mint and gently warm through.
- Drizzle a little cream on top of each serving if required.
