Tofu Vegetable Stir-Fry for under 300 calories

Ingredients

  • 1/4 cup (60 ml) soy sauce
  • 1 tbsp (15 ml) rice vinegar
  • 1 tbsp (15 ml) hoisin sauce
  • 3 garlic cloves, minced
  • 1 tbsp (15 ml) ginger root, minced
  • 1 pinch hot pepper flakes
  • 2 tsp (10 ml) cornflour
  • 1 pack firm tofu
  • 2 tbsp (30 ml) vegetable oil
  • 2 carrots, thinly sliced diagonally
  • 1-1/2 cups (375 ml) sliced & stemmed shiitake mushroom caps
  • 1 cup (250 ml) peas
  • 2 green onions, thinly sliced
  • 2 tsp (10 ml) sesame oil

Preparation

  1. In bowl, whisk the soy sauce, rice vinegar, hoisin sauce, cornflour and 3 tbsp (50 ml) water. Set aside.
  2. Dab tofu dry then cut into 3/4-inch (2 cm) cubes.
  3. In large wok, heat half of the oil over medium heat and add tofu. Stir fry until golden. Set to one side.
  4. Heat remaining oil in wok over medium heat. Stir fry garlic, ginger and hot pepper flakes for 30 seconds.
  5. Add carrots and mushrooms. Carry on frying for a minute. Add 1 tbsp (15 ml) water then cover and steam until carrots are tender for about 3 minutes.
  6. Add peas, tofu and soy sauce mixture. Increase heat to boil, stirring all the time until thickened and vegetables are tender. Stir in green onions and sesame oil. Serve immediately.
