Ingredients
- 4 new red potatoes
- 1-1/3 12 oz pork tenderloins
- pinch salt
- pinch pepper
- 1 1/4 tbsp (18 ml) vegetable oil
- 2 2/3 cups (650 ml) sliced mushrooms
- 2-3 cloves garlic, minced
- 3/4 tsp (4 ml) dried Italian herb seasoning
- 1 cup (250 ml) chicken stock
Preparation
- Pierce potatoes with fork. Place in microwaveable dish with1/4 cup (50 ml) water. Loosely cover and microwave until tender. Set aside.
- Sprinkle pork with salt and pepper. In an ovenproof skillet, on a high heat heat up the oil and drop in the pork and fry until brown pork on all sides. Transfer to a plate.
- Reduce heat to medium and cook mushrooms, garlic, seasoning and more salt and pepper until browned and liquid evaporated. Add stock.
- Return pork to the skillet and place the skillet in an oven heated to 425°F (220°C). Cook for 15 minutes until pork is cooked to your liking.
- Stand for 5 minutes then thinly slice pork. Serve with sauce and a potato per person.
