Ingredients

  • 1 pack mushrooms
  • 1 cup (250 ml) vegetable stock heated
  • 2 tbsp (30 ml) butter
  • 1 onion, finely chopped
  • 1 minced clove garlic
  • 1 tsp (5 ml) dried thyme
  • 1/4 tsp (1 ml) salt
  • 1/4 tsp (1 ml) pepper
  • 1 cup (250 ml) arborio rice or short grain Italian rice
  • 1/3 cup (75 ml) dry white wine or vegetable stock
  • 1 cup (250 ml) broad beans, drained from a tin or frozen and defrosted
  • 1/4 cup (60 ml) grated Parmesan cheese
  • 2 tbsp (30 ml) chopped fresh parsley

Preparation

  1. Chop mushrooms and microwave for 4 minutes. Drain off the juice and set aside the juice and the mushrooms.
  2. Add the hot stock to the mushroom juice and enough water to make 3 cups (750 ml). Set aside.
  3. In a large shallow saucepan melt 1 tbsp (15 ml) butter; fry mushrooms, onion, garlic, thyme, salt and pepper for about 5 minutes until onion is soft.
  4. Add rice mixing in thoroughly. Add wine, stirring constantly until no liquid remains. Add 1-1/2 cups (375 ml) of stock , 1/2 cup (125 ml) at a time and stirring until completely absorbed.
  5. Add the beans and remaining stock mixture in portions as before, stirring after each addition until completely absorbed
  6. The rice should be creamy and tender. Then stir in cheese, parsley and the last of the butter.
